I think all the hikes you are considering are great. I think Avalanche is the best of the bunch because you have incredible scenery 360 degrees at the top. Elephant Back has some amazing scenery too, just not in every direction. The hike along DeLacy Creek to Shoshone Lake is good and level. Fairy Falls is a great waterfall but as others have said the hike to get there is nothing special. If you do this hike make sure to go on to Imperial geyser.
