How much time will you be spending in the cabins? I'd choose based on what you wish to see.
At this point I'd choose Canyon because it is closer to, well, The Grand Canyon of the Yellowstone River, Hayden Valley, and Dunraven Pa$$. The hiking would to me be a bit more interesting in the Canyon area. On the other hand the wildlife is also more interesting too.
